Bánh Mi – Filled baguette

Teriyaki tempeh filled baguettes, filled with delicious vegetables and spicy fresh chillies and chilli mayonnaise!

Recipe

Makes 3 baguettes

3 frozen baguettes
1 pot of coriander
1 carrot
1/2 cucumber
2 spring onions
2 chillies (mild)
200 g teriyaki marinated tempeh.
1 tsp of sesame seeds
100 g roasted onion
3 tbsp mayonnaise
1 tbsp sriracha
1 tbsp sweet and sour sauce

Instructions

Place your baguettes in the oven and cook until they’re crispy and golden. Take them out and let them rest. In the meantime fry your tempeh and slice all your veggies. Preferably into long and thin slices. Once you have chopped up all your veggies, put them all on a plate. Prepare your sauce by mixing mayo, sriracha and sweet and sour sauce in a bowl.

Cut your baguettes in half and leave one edge connected. Fill your baguette by first applying the chili mayo on one of the sides and the fill with all your veggies. (It’s easiest to do in order from biggest/longest slices of veggies to smallest, so for example start with cucumber and finish with coriander. Then add your tempeh, sesame seeds and lastly the toasted onion.

Enjoy your perfect baguettes that are great for picnics!

Tip: Take parchment paper and cover your Banh Mi baguette with it so that it remains fresh!
