Breakfast tacos

Sometimes the best tacos are made right in your own kitchen. Filled with chorizo, eggs, cheese and avocado lime sauce, it’s the perfect breakfast, brunch or even lunch dish.

Recipe

2 tacos

Coriander 
2 eggs
2 limes
50g chorizo
2 corn tacos
50g Chipotle grated cheese
1 avocado
1 garlic clove
Olive oil
Salt
Black pepper

Instructions

Avocado lime sauce
Add the avocado, the juice of one lime, a handful of coriander, a pinch of salt and pepper, a clove of garlic and a splash of olive oil to a blender and blend until smooth.

Tacos
Start by cutting the chorizo into cubes and fry them in a pan until slightly crispy. Prepare the tacos by heating them in a non-stick pan with a little olive oil. Heat them over medium heat for 30 seconds to 1 minute on each side. Set the tacos aside and drizzle the pan with more olive oil. Add the cheese to the pan in a round shape, being sure to leave the center empty. Then crack one egg in the middle. Let it cook for 30 seconds, then pour a tablespoon of water into the pan and cover with a lid. Let the egg cook until it is no longer transparent. Place the cheese, egg and chorizo pieces on top of the corn taco. Drizzle with avocado lime sauce and a few fresh cilantro leaves. Repeat this twice to make two tacos!

Tip: If you don’t like runny yolks, you can also make an omelet with cheese.
