Delicious mango coconut bread

During my time living in Australia, I had a slice of freshly baked mango coconut bread every morning with a cup of coffee from the nearest coffee shop. It’s been four years since I had a piece of warm and rich mango coconut bread so I thought it was time to try to make it myself. I tried this recipe and I was instantly taken back to those mornings. I hope you also create some great memories by trying this recipe!

125 g of butter
1 tsp of vanilla essence
1,5 dl of sugar
2 eggs
1,5 dl of mango puree
3 dl of desiccated coconut
2,8 dl of flour
1 tsp of baking powder

Preheat oven to 175. Prepare your 1,5 l loaf pan with some baking paper. Beat butter, vanilla essence, and sugar. Add eggs, one at a time. Using a wooden spoon, stir in the mango puree and coconut flakes, then the flour with baking powder. Pour the mixture into the loaf pan. Bake the bread for 60-75 min. Let it cool for 5-10 minutes before cutting a slice.

Tip: If you want to enjoy the bread after it has cooled down, put a piece in the toaster and spread butter on top to enjoy a warm and soft mango coconut bread!
