Overnight Oats

In Italy, breakfast, colazione, is pretty much just a quick espresso from a neighborhood coffee house and a cornetto, a kind of croissant. They taste great and I enjoy eating them when I visit Italy!

In Finland, breakfast is a bit slower in pace. During the cold, dark mornings I like to sit in candlelight and enjoy Finnish berries and soft flavors, porridge made from an oat or soy drink base is wonderful. The easiness of it comes from me preparing it the night before and all I have to do in the morning is add berries or fruit. I put my Bialetti Mokka Express on the stove and let the best scent ever fill the house – the smell of fresh espresso. This often wakes up Rolf with a bright smile on his face. No better way to start your day than a smile!

If you want to make a larger batch of porridge and take it with you to work, just store it in a glass jar.

Overnight oats

One portion:
Measure in a bowl/glass jar the night before:
1 dl of oat flakes
1 dl of soy- or oat-based drink (or whatever you prefer)
1 dl of unflavored soy or oat yogurt (or whatever you prefer)
1 tbsp of chia seeds
1 tbsp date syrup / honey / maple syrup / coconut syrup
Mix properly, cover tightly, and place in the fridge overnight

In another bowl, place some berries to defrost overnight in the fridge
In the morning, take out the overnight oats and add the defrosted berries.
Cut some banana slices, decorate with some coconut flakes, and drop in a few walnuts.
