Browned lemon butter and kale orzo

the perfect meal for when you want something simple and full of flavor. The bright flavor of lemon is complemented by rich browned butter and crunchy garlic breadcrumbs. We recommend saving some lemon browned butter and garlic crumbs to mix into future recipes, such as salads or casseroles!

Recipe

1 bunch of kale, peeled and roughly chopped.
1 lemon
6 tbsp of butter
125 ml of Panko breadcrumbs
1 large clove of garlic, grated
150 ml of finely grated Parmesan cheese
Black pepper
Salt

Instructions

Bring water to a boil in a saucepan and add salt and orzo. cook until al dente. Add the kale 1 minute before the orzo is cooked, and dip it with a wooden spoon to wilt it.

Make the breadcrumb coating. Melt 2 tablespoons of butter in a pan. Add the breadcrumbs and cook until golden brown, 3-5 minutes. Add the grated garlic, stir and remove from the heat. Season with salt and pepper to taste.

Make browned lemon butter. Melt the remaining 4 tablespoons of butter in a saucepan over medium heat. Add the thinly sliced lemon wedges (without the seeds) and cook until slightly softened, about 5 minutes.Remove from heat and add the cooked orzo and kale and parmesan and stir into the browned lemon butter. Season with salt and pepper. Serve in bowls with toasted breadcrumbs. Top with the lemon slices you used to make the browned butter.
