3 dl wheat flour
1 dl sugar
1 tsp vanilla sugar
1 tsp baking soda
50 g butter (melted)
1 egg
2 dl of yoghurt
Raspberries
1 dl of icing sugar
1 tbsp of lemon juice
1 drop of pink food colouring
Sprinkles

Instructions

Mix all the dry ingredients in a bowl. Add the melted butter, yoghurt and egg and mix until you have a smooth batter. Put the batter in a piping bag and pipe onto the donut pan. add 1-3 raspberries on top of each donut. You can also skip this step or use chocolate chips or blueberries if you prefer!

Bake at 200°C in the middle of the oven for about 13-15 minutes. Prepare the icing by mixing the icing sugar with lemon juice and food colouring. You can use any food colouring you like and change the amount of food colouring used depending on how vibrant you want the icing to be. Once you’ve done this for all the doughnuts, repeat one more time for a more opaque frosting. Finally, sprinkle some sprinkles on top before the frosting dries.

Happy May Day!
