Valentine’s Day cake for two

Recipe

2 eggs
1 dl of sugar
1 tsp of vanilla sugar
1/2 dl of potato starch
1/2 dl of flour
1 tsp baking powder

Filling

Handful of fresh berries
tbsp jam
2 tbsp of whipped cream

Decorations

3 dl of whipping cream
1 teaspoon vanilla sugar
Red food colouring

Instructions

Beat the egg and sugar until fluffy and stiff. Combine the potato starch, flour and baking powder. Sift them into the egg-sugar mixture. Gently mix the dough, until smooth.
Line the bottom of two small heart-shaped cake tins with baking paper and grease the edges with butter. Pour the cake batter into the tins and bake in the bottom rack of a 180°C oven for about 12 minutes.

Allow the cakes to cool completely before opening the cake tin. Once cool, remove the cakes from the cake tins and cut off the rounded top from both of them. Now you should have two heart-shaped cakes ready to stack on each other. Place one on a cake stand and cover the top with jam. Then place sliced berries and cover with whipped cream. Now place the second cake on top of the first one to align perfectly.

Have your whipped cream with vanilla sugar ready in two shades of pink. One is lighter for the coating of the cake and another is darker for the decorating. Coat your cake in the lighter shade of pink with the help of a small palette knife. Make sure that you coat all parts of the cake and that it maintains its heart shape. With a piping bag and a star-shaped tip, start decorating your cake to your liking!
