Healthy Apple Pie

Treat yourself to an easy-to-make healthy apple pie! This recipe can be found in the book Kiitos Hyvää Pikaruokaa (transl. Good Fast Food, Please) by Virpi Mikkonen.
I like to make little variations to recipes, so in this one, I added some lemon juice, maple syrup, and chia seeds.

Healthy Apple Pie

3 organic apples
3 dl gluten-free oats
4 tbsp runny coconut oil
2 tbsp lemon juice
1 tbsp maple syrup
1 tbsp chia seeds

Season with:
2 tsp cinnamon
1 tsp cardamom
1 tsp ground ginger

Preheat the oven to 220°C. Take a 16 cm ø springform and place a baking sheet on the bottom. Close the form and cut out the excess paper. Apply some coconut oil on the sides so the pie won’t stick.
Place the oats in a blender, blend until you have a fine texture, and place them in a big bowl.
Slice two apples and blend them in a blender with the coconut oil, lemons juice, maple syrup, chia seeds, and the seasonings.
Pour the apple mix in the bowl with the oats and use a wooden spatula to mix them together.
Pour the dough into the cake form.
Slice one apple into thin slices, place them on top of the dough however you want, and sprinkle cinnamon on top.
Bake for 25 minutes, let it cool down for a bit, and enjoy!
